Cheese and Spinach Tortellini with Chicken, Fresh Tomatoes and Mushrooms (Tortellini con Formaggio e Spinaci con Pollo, Pomodoro Fresco e Funghi)

Ingredients

1 package (family size)BARILLA Cheese & Spinach Tortellini
1/4 cupextra virgin olive oil
1 poundchicken breast, diced
2 clovesgarlic, crushed
1 poundtomatoes on the vine, peeled, seeded and chopped
1/2 poundmushrooms, sliced
1/2 cupwhite wine
2 teaspoonsfresh Thyme, chopped
2 tablespoonfresh chives, chopped


BRING a large pot of water to a boil.
HEAT olive oil in a large skillet. Add chicken, season with salt and pepper. Sauté until golden and cooked through.
ADD garlic and cook for 1 minute.
ADD mushrooms and sauté for 2 minutes. Add white wine, reduce by half.
ADD tomatoes and thyme, bring to a simmer. Set aside.
COOK Tortellini according to package directions. Drain and add to sauce; mix well
