Cellentani with Artichokes and Shrimp (Cellentani con Carciofi e Gamberi)

Ingredients

1 box (16 ounces)BARILLA Cellentani
1/3 cupextra virgin olive oil
12 oz.raw shrimp, peeled and deveined
2 clovesgarlic, minced
2 packages (12 ounces)cherry tomatoes, halved
1 can (14 ounces)artichokes, drained and chopped
1-1/2 teaspoonsalt
1/8 teaspoonfreshly ground black pepper
3 tablespoonsfresh mint, chopped
3 tablespoonsparsley, chopped
1/4 teaspooncrushed red pepper flakes (optional)


HEAT oil in large skillet over medium heat. Add shrimp and garlic; cook 2 minutes. Add tomatoes, artichokes, salt and pepper to skillet; cook 8 minutes, stirring occasionally.
COOK pasta according to package directions. Drain, reserving 1/4 cup pasta water. Return pasta to pot.
ADD tomato mixture and reserving cooking water if needed to hot pasta. Add herbs; toss gently. Transfer to serving platter and serve



Sprinkle with freshly grated Parmesan cheese.
