| 1 box | PLUS® Penne |
| 4 tablespoons | extra virgin olive oil |
| 1 clove | garlic, whole pressed |
| 2 pounds | zucchini |
| to taste | salt |
| to taste | freshly ground black pepper |
| 1/2 cup | Parmigiano cheese, grated |
| 2 tablespoons | fresh parsley, chopped |
CUT the zucchini into medium sized cubes; season with salt and let drain for one hour.
SAUTE whole pressed garlic and oil for two minutes.
ADD zucchini, season with pepper and slowly cook until completely cooked through and easy to break about 10 minutes.
COOK pasta according to directions. Drain and toss with the sauce. Stir in cheese and parsley before serving.
