PLUS® Spaghetti with Eggplant, Cherry Tomatoes, Olives and Pecorino Cheese
Spaghetti PLUS® con Melanzane, Pomodorini, Olive e Pecorino

Ingredients

1 box PLUS® Spaghetti
1/3 cupextra virgin olive oil
1 clovegarlic
2 medium eggplants, diced
1/4 cupflour
1/2 cupkalamata olives, pitted, cut in halves
2 pints cherry tomatoes cut in halves
1/2 cupPecorino cheese, grated
6 leaves fresh basil, thinly sliced


SPRINKLE eggplant with salt in colander. Set aside to drain for 1 hour.
BRING a large pot of water to a boil.
HEAT olive oil in a large skillet.
PRESS the garlic clove with the flat of a knife. Add to skillet and sauté for 1 minute.
SPRINKLE eggplant with flour. Add to skillet and cook until tender.
STIR in cherry tomatoes and olives. Cook 2 more minutes.
COOK pasta according to package directions. Drain.
COMBINE pasta with sauce and mix well.
ADD grated cheese and basil.
