PLUS® Spaghetti with Basil Flavored Vegetables and Parmigiano Reggiano Cheese

Ingredients

1/2 box PLUS® Spaghetti
1 cup (1 small) zucchini
1 cup (1 medium)red bell pepper
1/3 cup, dividedextra virgin olive oil
1 clovegarlic, minced
2 filletsanchovies in olive oil
to tastesalt
to tastecrushed red chili pepper
1 cup (1/2 pint) cherry tomatoes
1/4 cup, packed fresh basil
2 cupsbroccoli florets
1/2 cupParmigiano Reggiano cheese, shaved


JULIENNE zucchini and bell pepper.
HEAT half of the olive oil in a large skillet. Add garlic and sauté until golden.
ADD pepper and cook for 2 minutes. (OPTIONAL: Add anchovies and let melt.)
ADD zucchini and cook 3 minutes. Season with salt and red pepper.
ADD cherry tomatoes.
PROCESS basil and remaining olive oil in a blender. Season with salt and pepper; set aside.
COOK pasta according to package directions. Add broccoli florets for the last 3 minutes of cooking. Drain.
ADD pasta to skillet and mix well.
DRIZZLE with basil oil. Top with shaved Parmigiano cheese.
