| 1 box | PLUS® Rotini |
| 1/3 cup | extra virgin olive oil |
| 1 clove | garlic |
| 1 tablespoon | fresh thyme |
| 1 cup (1 medium) | yellow pepper, chopped |
| 1 cup (1 medium) | red pepper, chopped |
| 1 cup (1 medium) | zucchini, chopped |
| 1 cup (1/2 pint) | cherry tomatoes, cut in half |
| to taste | salt |
| to taste | freshly ground black pepper |
| ½ cup | Parmigiano cheese, shaved |
BRING a large pot of water to a boil.
HEAT oil in a large skillet over medium heat. Add garlic and thyme, sauté 1-2 minutes or until yellow.
ADD vegetables and cook for 10 minutes. Season to taste with salt and pepper.
COOK pasta cook according to package directions. Drain; toss hot pasta with sauce.
GARNISH with cheese shavings.
