Ingredients

1 box PLUS® Rotini
1/3 cup extra virgin olive oil
1 clovegarlic
1 tablespoonfresh thyme
1 cup (1 medium)yellow pepper, chopped
1 cup (1 medium)red pepper, chopped
1 cup (1 medium)zucchini, chopped
1 cup (1/2 pint)cherry tomatoes, cut in half
to tastesalt
to tastefreshly ground black pepper
½ cup Parmigiano cheese, shaved


BRING a large pot of water to a boil.
HEAT oil in a large skillet over medium heat. Add garlic and thyme, sauté 1-2 minutes or until yellow.
ADD vegetables and cook for 10 minutes. Season to taste with salt and pepper.
COOK pasta cook according to package directions. Drain; toss hot pasta with sauce.
GARNISH with cheese shavings.
