PLUS™ Rotini with Shrimp, Fresh Tomatoes and Asparagus Tips (Rotini PLUS™ con Gamberi, Pomodoro ed Asparagi)

Ingredients

1/3 cupextra virgin olive oil
1/2 cupwhite onions, sliced thin
1 poundasparagus, sliced into 1 inch pieces
1 pound (5 medium)fresh plum tomatoes, seeded and diced
1 poundmedium shrimp, peeled and de-veined
to tastesalt
to tastefreshly ground black pepper
1 boxPLUS™ Rotini
2 tablespoonsfresh parsley, chopped


BRING a large pot of water to a boil.
HEAT oil in a large skillet over medium heat. Add onions and sauté 2-3 minutes or until golden.
ADD asparagus and sauté an additional 1-2 minutes. Add tomatoes and shrimp, simmer for 4-5 minutes or until shrimp is cooked and opaque. Season to taste with salt and pepper.
COOK pasta according to package directions. Drain, add to sauce and toss.
GARNISH with chopped parsle
