Barilla PLUS® Rotini with Roasted Garlic Sauce, Endive and Pancetta (Rotini Barilla PLUS® con Aglio Arrostito, Indivia e Pancetta)

Ingredients

2 poundsbelgium endive
1/4 cupextra virgin olive oil
1 cup (4 ounces)pancetta, cubed
to tastecrushed red chilli peppers (optional)
1 jarBARILLA Roasted Garlic Sauce
1 boxBARILLA PLUS Rotini


BRING a large pot and another 4 quart-size pot of water to a boil.
CUT endive into 1/2 inch size pieces. Place in 4 quart-size pot and boil for 1-2 minutes. Drain and set aside.
HEAT olive oil in a large skillet over high heat. Add pancetta and chilli peppers (if desired); cook until pancetta is crispy. Set aside.
ADD Roasted Garlic and Onion Sauce and endive to skillet. Simmer for 5 minutes; set aside.
COOK pasta according to package directions. Drain reserving 1/4 cup pasta cooking water.
ADD reserved pasta cooking water to sauce mixture. Add pasta to skillet and mix well.
TRANSFER to a serving platter or bowl Sprinkle with cheese and serve immediately
