PLUS™ Rotini with Marinated Tomatoes and Goat Cheese (Rotini con Pomodori Marinate e Formaggio di Capra)

Ingredients

1 boxPLUS™ Rotini
4 cupstomatoes, seeded and chopped
½ cupolive oil
1 teaspoonfresh rosemary, chopped
1 teaspoonfresh thyme, leaves only
2 tablespoonsfresh basil, chiffonade (thin strips)
1-½ teaspoonsgarlic, minced
to tastesalt
to tastefreshly ground black pepper
1 container (5.2 ounces)goat cheese


COMBINE tomatoes, olive oil, rosemary, thyme, basil salt and pepper in a large bowl. Toss well and set aside at room temperature for at least one hour, mixing occasionally. In a separate bowl, set aside the goat cheese at room temperature as well.
BRING a large pot of water to a boil.
COOK PLUS Rotini according to the package directions. Drain and add to tomato mixture; mix well.
CRUMBLE goat cheese over top and toss until cheese melts. Serve immediately
