| 1 box | PLUS® Rotini |
| 4 cups | tomatoes, seeded and chopped |
| ½ cup | olive oil |
| 1 teaspoon | fresh rosemary, chopped |
| 1 teaspoon | fresh thyme, leaves only |
| 2 tablespoons | fresh basil, chiffonade (thin strips) |
| 1-½ teaspoons | garlic, minced |
| to taste | salt |
| to taste | freshly ground black pepper |
| 1 container (5.2 ounces) | goat cheese |
COMBINE tomatoes, olive oil, rosemary, thyme, basil salt and pepper in a large bowl. Toss well and set aside at room temperature for at least one hour, mixing occasionally. In a separate bowl, set aside the goat cheese at room temperature as well.
BRING a large pot of water to a boil.
COOK PLUS® Rotini according to the package directions. Drain and add to tomato mixture; mix well.
CRUMBLE goat cheese over top and toss until cheese melts. Serve immediately.
