Barilla PLUS® Rotini with Green Pea Puree and Parmigiano (Rotini Barilla PLUS® con Salsa di Piselli e Parmigiano)

Ingredients

1 bag (16 ounces)frozen peas, defrosted (may substitute with soybeans if kids like them)
1 cupwater
1 pinchsalt
1/2 smallonion, minced
1 tablespoonextra virgin olive oil
3-4 stripspancetta (may substitute bacon)
1 boxBARILLA PLUS Rotini
to tasteParmigiano cheese


HEAT olive oil in a large skillet over medium heat. Add onion and bacon; saute. Add the peas and 1 cup of water. Cook for approximately 10 minutes.
COOK Rotini in salted boiling water according to package directions.
BLEND cooked pea mixture in a blender until smooth, while the pasta is cooking.
DRAIN the pasta and place in a bowl. Pour blended peas over the pasta and sprinkle with Parmigiano cheese to taste
