| 1 box | PLUS® Rotini |
| 1 bag (16 ounces) | frozen peas, defrosted (may substitute with soybeans if kids like them) |
| 1 cup | water |
| 1 pinch | salt |
| 1/2 small | onion, minced |
| 1 tablespoon | extra virgin olive oil |
| 3-4 | pancetta strips (may substitute bacon) |
| to taste | Parmigiano cheese |
HEAT olive oil in a large skillet over medium heat. Add onion and bacon; saute. Add the peas and 1 cup of water. Cook for approximately 10 minutes.
COOK Rotini in salted boiling water according to package directions.
BLEND cooked pea mixture in a blender until smooth, while the pasta is cooking.
DRAIN the pasta and place in a bowl. Pour blended peas over the pasta and sprinkle with Parmigiano cheese to taste.
