PLUS™ Penne with Chicken, Spinach and Tomatoes with a Balsamic Vinaigrette (Penne PLUS™ con Pollo, Spinaci, Pomodoro con Vinaigrette al Balsamico)

Ingredients

1/2 cupextra virgin olive oil, divided
1 boxPLUS™ Penne
1 poundchicken breast boneless, skinless, diced
to tastesalt
to tastefreshly ground black pepper
2-1/2 cups (3 ounces)fresh spinach, chopped
2-1/2 cups (3 ounces)fresh tomatoes, seeded, chopped
1/2 cupred onion, thinly sliced
1/2 cupyellow bell pepper, diced
2 teaspoonsDijon mustard
1/4 cupbalsamic vinegar


BRING a large pot of water to a boil.
COOK pasta according to package directions. Drain and spread on baking sheet to cool.
SPRINKLE with 1 tablespoon olive oil and set aside.
HEAT 1 tablespoon olive oil in a medium skillet. Add chicken and sauté until cooked through.
WHISK vinegar into mustard in a small bowl. Gradually whisk in remaining olive oil; season with salt and pepper.
MIX all ingredients together in a large bowl. Season with salt and pepper if needed.
REFRIGERATE before serving



May substitute cooked or leftover chicken
