PLUS™ Penne with Chicken, Prunes and Olives (Penne PLUS™ con Pollo, Prugne ed Olive)

Ingredients

2 tablespoonsextra virgin olive oil
1 poundchicken breast, cut in strips
2 clovesgarlic, minced
1 cupwhite wine
1 cupchicken broth
2 tablespoonsbalsamic vinegar
1/2 teaspoondried oregano
1 cupgreen olives, cut in halves
1 tablespooncapers
3/4 cupprunes, diced
1 box (16 ounces)PLUS™ Penne


HEAT olive oil in a large skillet. Add chicken and brown on all sides. Remove from skillet.
ADD garlic to same skillet and sauté until golden.
ADD wine and simmer until reduced by half.
BRING a large pot of water to a boil.
STIR in chicken broth, balsamic vinegar and oregano. Simmer 10 minutes.
ADD chicken, prunes, capers, and olives. Set aside.
COOK pasta according to package directions. Drain and add to sauce. Mix well
