PLUS® Elbows with Stewed Eggplant and Goat Cheese

Ingredients

1 box PLUS® Elbows
4 cups (1 pound)eggplant, diced
1 tablespoonflour
1/4 cupextra virgin olive oil
1 clovegarlic, minced
8 ounces mushrooms, sliced
1 can (28 ounces) Italian plum tomatoes
1 tablespoonfresh thyme, chopped
1 tablespoonfresh basil, chopped
to tastesalt
to tastefreshly ground black pepper
4 ouncesgoat cheese, crumbled


SPRINKLE eggplant with salt and drain in colander for 30 minutes. Toss eggplant with flour.
BRING a large pot of water to a boil.
HEAT olive oil in a large skillet. Add eggplant and sauté until golden.
ADD mushrooms and garlic. Cook 2-3 minutes or until mushrooms are tender.
ADD tomatoes. Season with salt and pepper and simmer 10 minutes.
ADD basil and thyme to sauce.
COOK pasta according to package directions. Drain.
ADD pasta to sauce and mix well. Gently mix in goat cheese and serve.
