Ingredients

1 bag (15 ounces)arugula, stems discarded, leaves torn
1 small headbibb lettuce, leaves torn
½ cupcelery, sliced thin
½ smallred onion, sliced thin
½ cupcherry tomatoes, halved
½ cupblack olives, brine-cured, drained
1 tablespooncapers, drained, rinsed
5 tablespoonsextra virgin olive oil
to tastecoarse sea salt
1 tablespoonred wine vinegar


COMBINE all vegetables in a large bowl.
TOSS with olive oil and vinegar. Season with sea salt.
