Angel Hair with Artichokes, Toasted Pine Nuts and Bread Crumbs

Ingredients

1 boxBARILLA Angel Hair
4 eachartichokes, sliced
6fresh lemon slices
¼ cupextra virgin olive oil
1 clovegarlic, chopped
3 tablespoonsfresh parsley, chopped
1 cupchicken broth
¾ cupbread crumbs
¼ cuppine nuts
½ cupPecorino Romano cheese, grated


BRING a large pot of water to a boil to cook the pasta.
PEEL artichokes and clean out the center. Cut in half and then into small dices. Place diced artichoke pieces into a large bowl filled with water and lemon slices to prevent discoloring.
SAUTÉ garlic in olive oil in a large skillet over medium until garlic is slightly yellow.
ADD artichokes to the skillet and saute until cooked thoroughly.
ADD parsley and chicken broth. Continue cooking until liquid is reduced by half.
TOAST bread crumbs and pine nuts in separate dry skillet over medium heat. Mix in grated cheese.
COOK Angel Hair according to package directions. Drain and toss with artichokes. Top with bread crumb and pine nut mixture.
