Ingredients for 4 people
1 head Torbole broccoli
1 egg
7 ounces ricotta
¼ cup grated Parmigiano Reggiano
salt and pepper to taste
For sauce
½ head Torbole broccoli
3 ½ ounces Taleggio cheese
Butter as needed
Preparation 40 minutes preparation + 20 minutes cooking

Rinse the broccoli under running water.

Remove leaves and boil in salted water until a knife can easily pierce the center of the broccoli.

Drain and chop, then mix with the ricotta.

Add a whole egg, grated cheese and a pinch of freshly ground pepper and mix well.

Fill individual buttered ramekins with the mixture.

Bake in a preheated 325°F oven for about 20 minutes.

To prepare the sauce, boil another ½ head of broccoli. Drain and purée in food processor. Heat sauce in a pan with diced Taleggio until the cheese is completely melted.

Allow custards to rest for 5 minutes before turning onto hot individual serving dishes and dressing with sauce.
