1 cup grated Parmigiano Reggiano cheese

Preparation 10 minutes preparation + 40 minutes cooking

Clean cardoons, peel and remove tough fibers, and cut into medium-sized pieces. Place in water with lemon juice, then boil for about 10 minutes in salted acidulated water.

Butter a baking dish and arrange one layer of cardoons, sprinkle with grated cheese and drizzle with melted butter.

Make a second layer, sprinkle with grated cheese and drizzle with melted butter, continuing to make layers with all the rest of the ingredients. Bake in a preheated 350° F oven for about 30 minutes. Serve hot.
