How to make vegetable broth
Ingredients for 4 people
3.5 quarts water
5 oz white onion
3 ½ oz leek
5 oz carrot
5 oz celery
a couple whole peppercorns

Preparation

Wash, trim and roughly chop the vegetables.

Place them in a large pot and add a couple peppercorns and the salt.

Add the water to the pot and simmer over medium heat for an hour from when the water begins to boil.

After an hour, remove the pot from the heat and strain the broth through a chinois, a conical sieve.
