How to make a fish stuffing

Ingredients for 4 people
1 boned fish fillets
5 peeled garlic cloves
1 sprig parsley
1 egg white
½ cup Riviera Ligure extra virgin olive oil
salt
freshly ground black pepper

Preparation

Smash the garlic using the flat side of a knife. Heat the garlic and olive oil in a pan, then remove the pan from the heat.

Skin the fish fillets and roughly chop. Make sure that there are no bones.

Place the fish, parsley, egg white, salt, pepper, olive oil and garlic in a blender or food processor and puree until chopped uniformly.
