A simple, healthy salad with light but lovely Italian flavor - PLUS® Rotini with zucchini, carrots, corn, grape tomatoes, mozzarella and fresh basil.

BARILLA PASTA:
PLUS® Rotini PLUS® Rotini

Ingredients

1 BOX Barilla Plus® Rotini
3 TABLESPOONS Extra Virgin Olive Oil, Divided
1 CUP Zucchini, Cubed
1/2 CUP Carrot, Cubed
1 CUP Canned Corn (May Substitute Frozen Corn)
2 CUPS Grape Tomatoes, Halved
2 LEAVES Fresh Basil, Julienne
TO TASTE Salt
TO TASTE Black Pepper, Freshly Ground
2 CUPS Mozzarella Cheese, Shredded

Cooking Instructions

    BRING a large pot of water to a boil.
    SAUTÉ
    zucchini and carrots in half of the olive oil; season with salt and pepper. Set aside and to cool down.
    STIR in the corn, tomatoes, basil, and 1 tablespoon of oil. Allow mixture to marinate for 1 hour.
    COOK PLUS® Rotini 1 minute less than according to the package directions.
    DRAIN and drizzle with the remaining oil. Transfer pasta to a sheet pan and allow to cool.
    COMBINE and toss Rotini with the vegetables and mozzarella cheese before serving.
