PLUS® Angel Hair with Marinara Sauce, Zucchini and Mint

A touch of mint adds zest to a healthy mix of PLUS pasta, classic marinara and garden-delicious zucchini!

BARILLA PASTA:
PLUS® Angel Hair
Ingredients

Barilla Plus® Angel Hair |
| 1 JAR |
Barilla Marinara - Traditional Sauce |
| 2 CUPS |
Zucchini, Sliced |
| TO TASTE |
Salt |
| 1/3 CUP |
Extra Virgin Olive Oil |
| TO TASTE |
Black Pepper, Freshly Ground |
| 1/3 CUP |
Romano Cheese, Freshly Grated |
| 1 TABLESPOON |
Fresh Mint, Chopped |
Cooking Instructions
TOSS zucchini with salt and place in a colander to drain for 1 hour.
BRING a large pot of water to a boil.
HEAT olive oil in a large skillet over medium heat, saute zucchini 4-5 minutes until lightly golden and cooked through.
ADD sauce and simmer for 2 minutes until sauce is heated through. Set aside.
COOK PLUS Angel Hair according to package directions.
DRAIN and TOSS pasta with sauce; season with salt and pepper. Transfer to a serving bowl or platter. Sprinkle with cheese and mint. |
