Fettuccine Fettuccine

Ingredients

1 BOX Barilla Fettuccine
4 TABLESPOONS Extra Virgin Olive Oil, Divided
1 POUND Italian Sausage, Crumbled
2 Leeks, Diced
1/2 CUP Dry White Wine
2 CUPS Pecorino Cheese, Grated
TO TASTE Salt
TO TASTE Black Pepper, Freshly Ground

Cooking Instructions

    BRING a large pot of water to a boil.
    BROWN sausage in a medium sauté pan in 2 tablespoons olive oil over medium heat.
    ADD leeks, and sauté for 2 minutes. Add wine and simmer until liquid is almost completely evaporated, about 5 minutes. Season with salt and black pepper.
    COOK Fettuccine according to package directions. Drain pasta and toss with the sauce.
    STIR in cheese and remaining olive oil before serving.
