Elbows Pasta Salad with Mozzarella, Basil and Roasted Peppers

A great chilled selection for a main course or a side dish - tossed colorfully and flavorfully with red peppers, mozzarella balls and fresh basil.

PREP TIME: 35 minutes

COOK TIME: 7 minutes

SERVES: 7-9

BARILLA PASTA:
Elbows Elbows

Ingredients

1 BOX Barilla Elbows
6 Medium Red Bell Peppers
3 TABLESPOONS Extra Virgin Olive Oil
2 CUPS Fresh Balls Mozzarella Cheese, Halved
20 LEAVES Fresh Basil, Chopped
TO TASTE Salt
TO TASTE Black Pepper, Freshly Ground

Cooking Instructions

    BROIL or grill peppers for 20 to 25 minutes or until skins are blackened and blistered, turning occasionally. Place peppers in a paper bag; let stand 10 to 15 minutes. Remove skins; chop and set aside.
    BRING a large pot of water to a boil.
    ADD Elbows to boiling water and cook for 2 minutes less than recommended cook time. Drain pasta; pour onto a tray to cool. Drizzle with olive oil.
    MIX Elbows, peppers, mozzarella cheese, basil, salt and pepper in a large bowl and serve.
