Elbows Pasta Salad with Mozzarella, Basil and Roasted Peppers

A great chilled selection for a main course or a side dish - tossed colorfully and flavorfully with red peppers, mozzarella balls and fresh basil.
PREP TIME: 35 minutes 
COOK TIME: 7 minutes 
SERVES: 7-9 
BARILLA PASTA:
Elbows
Ingredients

Barilla Elbows |
| 6 |
Medium Red Bell Peppers |
| 3 TABLESPOONS |
Extra Virgin Olive Oil |
| 2 CUPS |
Fresh Balls Mozzarella Cheese, Halved |
| 20 LEAVES |
Fresh Basil, Chopped |
| TO TASTE |
Salt |
| TO TASTE |
Black Pepper, Freshly Ground |
Cooking Instructions
BROIL or grill peppers for 20 to 25 minutes or until skins are blackened and blistered, turning occasionally. Place peppers in a paper bag; let stand 10 to 15 minutes. Remove skins; chop and set aside.
BRING a large pot of water to a boil.
ADD Elbows to boiling water and cook for 2 minutes less than recommended cook time. Drain pasta; pour onto a tray to cool. Drizzle with olive oil.
MIX Elbows, peppers, mozzarella cheese, basil, salt and pepper in a large bowl and serve. |
