Summer Like the Italians with Recipes & Entertaining Tips

Like so many Americans, Italians escape the summer heat by heading to the seaside, pool resorts, and just about any cool body of water they can find. And eating is a big part of vacationing, as Italians take a break from their kitchens to dine outside in the glorious Mediterranean sun at seaside restaurants and cafes.

Farfalle pasta salad with roasted peppers and Mozzarella


Ingredients

1 box Barilla Farfalle
2 red peppers
2 yellow peppers
1 green pepper
1 medium red onion
1 lb fresh mozzarella
2 tbs salted capers
1 anchovy fillet
Sea salt, black pepper to taste
10 leaves fresh basil
¼ cup extra virgin olive oil
1 cup green olives, pitted

Directions

CUT the onion julienne, sauté with 1 tbs of olive oil for five minutes. Season with salt and set aside.
ROAST the peppers on the stove. When the skin is completely burned place in a zip log bag to cool down. Peel them and cut in thin slices.
MARINATE the peppers with olive oil, onion, salt, black peppers, capers, basil and olives for one hour.
Meanwhile COOK pasta in salted water, drain one minute before the lower recommended cooking time.
PLACE pasta on a large sheet tray, drizzle with little olive oil to prevent from sticking and let it cool down.
COMBINE pasta with the marinated peppers.
SERVE cold.
