Things to Do
 
Here is a checklist of things to do and things to buy at the store in order to host this party:

2 weeks prior: invite family and/or friends and set the date

  call merchants for hard-to-find ingredients: Winter white truffles (try www.urbani.com or your local gourmet food store). Alternatively, although not nearly as exciting, you can get jarred truffles at a gourmet food store like 
www.gourmetfoodstore.com
For your wine selection, you may want to call a specialty wine store in your neighborhood as well.

determine what serving pieces you will need


1 week prior: order floral arrangement and shop for or borrow table accessories such as:

candles, votives

colored glassware

table linens

2 days prior:
Set the table

Label your serving dishes and utensils

 

 

 

 

 

 

 

1-2 Days Prior: run final errands and grocery shop – list is as follows:

Pick up any floral arrangements
Pick up wine

5-6 medium Russet potatoes
6 medium artichokes
½ bunch Italian parsley
3 medium Macintosh apples
3 lemons
1 fennel bulb
1 medium white onion

>Dairy
1 dozen large eggs
1 pound butter
1 quart heavy cream
1 piece (1 lb) fresh Parmigiano Reggiano
1 pint milk

>Grocery
4 ½ cups chicken broth
1 can (16oz.) bread crumbs
1 jar apricot jam
1 box (8 oz) Barilla Orzo
1 bottle white wine

>Meat
1 ½  lbs. beef tenderloin filet
6 (6 oz. each) veal chops

>Possible pantry/fridge items
salt
pepper
flour
white pepper
baking powder
sugar
extra virgin olive oil

>Specialty/Gourmet store

* hard to find ingredients should be ordered ahead of time

 

Same Day: Prepare food –

Potato Flan --- make and refrigerate; bake 1 hour before serving

Artichokes – prepare and refrigerate; fry 15 minutes before guests arrive

Make the apple tarte, bake before serving

Carpaccio – prepare fennel salad and refrigerate; final prep before serving

Veal – prepare before serving

Orzo – prepare before serving

3 Hours Prior: Chill white wines if being served

½ Hour Prior: Finishing touches!
